Whip Up Deliciousness in No Time: Vegan and Dairy Dessert Delights for Beginner Bakers!

I used to love baking, especially the easy recipes but growing older, I’ve found that I don’t make time for it. Either it feels like it takes too long, or I’m not sure how it’ll turn out. I’m also notorious for switching out ingredients in order to make recipes easier for me; something that isn’t ideal when baking. The other issue is finding ingredients. A few years back, I had to cut out dairy from my diet which made it quite challenging to find good sweet treats. Vegan options have come along way but that’s why it felt important to include two recipes in one post.


Below there are two slightly different dessert options, but both are easy to make. But a pro tip: for the normal cupcakes, you can swap out the dairy ingredients for vegan alternatives (such as margarine and coconut milk).


Vegan Berry Crisp


Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40 minutes Servings: 6


Ingredients:


  • 4 cups mixed berries (strawberries, blueberries, raspberries)

  • 1 cup rolled oats

  • 1/2 cup almond flour

  • 1/4 cup maple syrup

  • 2 tbsp coconut oil, melted

  • 1 tsp cinnamon

  • Pinch of salt


Instructions:


  • Preheat your oven to 350°F (180°C).

  • In a bowl, mix the berries with 2 tablespoons of maple syrup and spread them evenly in a baking dish.

  • In another bowl, combine rolled oats, almond flour, remaining maple syrup, melted coconut oil, cinnamon, and salt. Mix well until the mixture is crumbly.

  • Sprinkle the oat mixture over the berries in the baking dish.

  • Bake for 30 minutes or until the top is golden brown and the berries are bubbling.

  • Serve warm with a dollop of coconut whipped cream or a scoop of dairy-free ice cream.


Classic Vanilla Cupcakes


Prep Time: 15 minutes Cook Time: 20 minutes Total Time: 35 minutes Servings: 12


Ingredients:


  • 1 1/2 cups all-purpose flour

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup unsalted butter, softened

  • 3/4 cup granulated sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 1/2 cup milk


Instructions:


  • Preheat the oven to 350°F (180°C) and line a muffin tin with cupcake liners.

  • In a bowl, whisk together the flour, baking powder, and salt.

  • In another bowl, cream the butter and sugar together until light and fluffy.

  • Add the eggs, one at a time, mixing well after each addition. Then, add the vanilla extract.

  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until just combined.

  • Divide the batter evenly among the cupcake liners, filling each about two-thirds full.

  • Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.

  • Let the cupcakes cool completely before frosting with your favorite buttercream or cream cheese frosting.
