Welcome to our kitchen where magic happens in the form of delectable desserts that are not only easy to make but also nutritious and delicious! Today, we bring you two delightful dessert options - one for our vegan friends and one for those who enjoy dairy in their sweet treats. These recipes are designed to appeal to beginner bakers and cooks, ensuring that everyone can partake in the joy of creating a delightful dessert in less than an hour. So, let's roll up our sleeves and dive into the world of sweet indulgence!
I used to love baking, especially the easy recipes but growing older, I’ve found that I don’t make time for it. Either it feels like it takes too long, or I’m not sure how it’ll turn out. I’m also notorious for switching out ingredients in order to make recipes easier for me; something that isn’t ideal when baking. The other issue is finding ingredients. A few years back, I had to cut out dairy from my diet which made it quite challenging to find good sweet treats. Vegan options have come along way but that’s why it felt important to include two recipes in one post.
Below there are two slightly different dessert options, but both are easy to make. But a pro tip: for the normal cupcakes, you can swap out the dairy ingredients for vegan alternatives (such as margarine and coconut milk).
Vegan Berry Crisp
Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40 minutes Servings: 6

1/4 cup maple syrup
2 tbsp coconut oil, melted
1 tsp cinnamon
Pinch of salt
Instructions:
Preheat your oven to 350°F (180°C).
In a bowl, mix the berries with 2 tablespoons of maple syrup and spread them evenly in a baking dish.
In another bowl, combine rolled oats, almond flour, remaining maple syrup, melted coconut oil, cinnamon, and salt. Mix well until the mixture is crumbly.
Sprinkle the oat mixture over the berries in the baking dish.
Bake for 30 minutes or until the top is golden brown and the berries are bubbling.
Serve warm with a dollop of coconut whipped cream or a scoop of dairy-free ice cream.
